Cannelloni Zucchini with Ricotta Recipe

Ingredients

  • 1 medium courgette
  • 60g of red pepper
  • 60g of green pepper
  • ½ onion
  • 1 tablespoon of olive oil
  • black pepper
  • salt to taste
  • 150g of ricotta cheese
  • 1 teaspoon of thyme
  • 300g of mozzarella cheese

Method

  1. Slice 1 medium courgette into thin slices
  2. Boil the slices for 1 minute
  3. Cut 60g of red pepper into cubes
  4. Cut 60g of green pepper
  5. Dice ½ onion
  6. Add 1 tablespoon of olive oil to the pan
  7. Add onions, some black pepper, green and red peppers to the pan, and stir everything
  8. Cook for 3 minutes
  9. Add salt to taste
  10. Cook for 3-4 munites more
  11. Remove the vegetables from the pan and put them into a bowl
  12. Add 150g of ricotta cheese to the vegetables
  13. Add 1 teaspoon of thyme, ½ teaspoon of salt and mix everything together
  14. Make a base from courgette and wrap ricotta filling
  15. Put the rolls on a sheet pan and sprinkle with mozzarella cheese
  16. Bake for 10 minutes at 180C or 155F
  17. Serve your meal
