Ingredients

  • ½ cup of oil
  • 1 teaspoon of garlic and ginger paste
  • 200g of chopped onion
  • 150g of diced tomatoes
  • 1 tablespoon of salt
  • 1 teaspoon of cumin
  • 1 teaspoon of black pepper
  • 1 teaspoon of red chili powder
  • 1 teaspoon of turmeric
  • 1 tablespoon of dried coriander
  • 250g of potatoes
  • 4 eggs
  • 2 teaspoons of fresh coriander

Method

  1. Pour ½ cup of oil into the pan
  2. Add 1 teaspoon of garlic and ginger paste
  3. Once the garlic becomes golden brown, add 200g of chopped onion
  4. Cook the onion for a few minutes and then add 150g of diced tomatoes
  5. Add 1 tablespoon of salt, 1 teaspoon of cumin, 1 teaspoon of black pepper, 1 teaspoon of red chili powder, 1 teaspoon of turmeric, 1 tablespoon of dried coriander, and mix everything together
  6. Peel 250g of potatoes, wash and cut them, and add to the pan
  7. Cover the pan with a lid and cook the potatoes on low heat for 10 minutes
  8. Beat 4 eggs, add them to the vegetables, and carefully mix everything
  9. Cook for another few minutes
  10. Sprinkle the dish with 2 teaspoons of fresh coriander and serve it

Tips

Boil the potatoes in advance to prevent them from being raw.
