Ingredients

  • 1 ½ cups of espresso
  • 6 tablespoons of golden rum
  • 6 egg yolks
  • ¾ cup of sugar
  • 2 cups of heavy cream
  • 16 ounces of mascarpone cheese
  • 12 ladyfingers cookies

Method

  1. Mix 1 ½ cups of espresso with 6 tablespoons of golden rum
  2. Put 6 egg yolks into a bowl, add ¾ cup of sugar, mix everything together and cook in a water bath until it becomes white and smooth
  3. Pour 2 cups of cold heavy cream (30-35% of fat) into a bowl and whip it
  4. Mix the egg cream you made earlier with 16 ounces of mascarpone cheese
  5. Gradually add the whipped cream and mix everything together
  6. Dip ladyfingers cookies in espresso and place a layer of cookies in a glass baking pan
  7. Spread half of the cream on top
  8. Make another layer of cookies
  9. Spread the remaining cream on top
  10. Put the cake into the fridge for at least 8 hours or overnight
  11. Sprinkle some cocoa powder on top and serve your tiramisu

Tips

In case you don’t want to use eggs in your cream, just mix the mascarpone cheese with 500ml of whipped cream and 1 cup of sugar.
