Traditional Ratatouille Recipe

Ratatouille has become extremely popular after the 2007 Pixar movie and even though it is a rather simple dish it has millions of admirers all over the world. So how to cook ratatouille as good as Remy? Here is the recipe of the best ratatouille that will conquer the heart of any food critic.

Ingredients

  • 1 green paprika
  • 1 yellow bell pepper
  • ½ red bell pepper
  • 1 eggplant
  • 1 courgette
  • 2 tomatoes
  • 1 onion
  • 1 garlic clove
  • 100g of crushed tomato
  • Salt
  • Pepper
  • Olive oil
  • Balsamic vinegar
  • Bay leaves
  • Fresh parsley

Method

  1. Remove the seeds from 1 green bell pepper, 1 yellow bell pepper, and ½ red bell pepper
  2. Wrap each pepper in foil and bake for 20 minutes at 200C or 390F
  3. Preheat the pan and grease it with some olive oil
  4. Cut 1 onion, 1 garlic clove and saute them for 5 minutes
  5. Add 2 bay leaves, some fresh parsley, 100g of tomato paste, salt and black pepper to taste, mix everything and cook for 5 minutes
  6. Remove the peppers from the oven, let them cool, and peel them
  7. Cut the peppers and grind them in a food processor or using a blender
  8. Remove parsley and bay leaves from the sauce and add ground peppers to it
  9. Cook on low heat for 2 minutes
  10. Cut 1 courgette, 1 eggplant, and 2 tomatoes into even circles
  11. Spread the sauce on the bottom of your baking pan
  12. Put the vegetables one by one as shown in the video
  13. Sprinkle some black pepper, salt, olive oil, and balsamic vinegar on top
  14. Cover the pan with foil and bake for 1 hour at 150C or 300F

Tips

Make sure you cut the vegetables into even circles, otherwise your ratatouille won’t be pretty.
