Crispy Flamiche

French flamiche is one of those meals that seems weird but tastes mind-blowingly delicious. Crispy crust and tender filling inside is the perfect combination that will simply blow your mind. So grab the ingredients and let’s make traditional French flamiche together.

Ingredients

  • Dough:
  • 250g of wheat flour
  • 125g of butter
  • 1 teaspoon of salt
  • 2 egg yolks
  • 50ml of cold water
  • Filling
  • 300g of leek
  • 150g of bacon
  • 15g of butter
  • 3 eggs
  • 200g of cream
  • Nutmeg
  • 1 teaspoon of salt
  • Pepper

Method

  1. Mix 250g of flour with 125g of butter
  2. Add 2 egg yolks, 1 teaspoon of salt, 500ml of water, and mix everything together
  3. Wrap the dough in plastic and refrigerate for 40-60 minutes
  4. Roll the dough
  5. Grease your baking pan with some butter and put the dough in it
  6. Cover the dough with foil, put some peas on top, and bake it for 15 minutes at 180C or 350F
  7. Fry 150g of bacon, put it on a paper towel and let it cool
  8. Cut 270g of leek
  9. Wash the leek to make it less bitter
  10. Grease the pan with 15g of butter and saute the leek for 5-8 minutes
  11. Season the leek with some salt and pepper to taste
  12. Mix 3 eggs with 200ml of cream, some salt to taste, nutmeg, and black pepper
  13. Add the leek and bacon to the sauce
  14. Pour the filling into the pie base, sprinkle some bacon on top, and bake for 30 minutes at 180C or 350F

If you want to save some time, use pre-made frozen dough.
