Traditional French Cassoulet

Cassoulet is a traditional French meal that will no doubt conquer the hearts of all meat lovers. Although it’s rather time-consuming to make, the taste of tender meat is definitely worth all the effort and time. So if you love meat, go ahead and try making French cassoulet now.

Ingredients

  • 1 onion
  • Cloves
  • Bay leaves
  • 1 tomato
  • 2 carrots
  • Garlic cloves
  • Rosemary
  • Flavoured onion
  • 300g of white beans
  • 500ml of meat stock
  • 500ml of water
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of tomato paste
  • Salt
  • Pepper
  • Olive oil
  • Ham bone
  • 200g of pork rind
  • 2 sausages
  • 500g of pork ribs
  • Duck confit

Method

  1. Cut 1 onion in half and cover the halves in bay leaves using cloves
  2. Soak 300g of white beans in water for 24 hours
  3. Preheat the pan and put ham bone and 200g of pork rind in it
  4. Add the beans, onion, 1 tomato, 2 carrots, 3 garlic cloves, 500ml of meat stock, 500ml of water, 1 tablespoon of balsamic vinegar, salt to taste, 1 tablespoon of tomato paste, duck confit fat, and rosemary or thyme
  5. Cover with a lid and bring to boil
  6. Remove the foam
  7. Cover with a lid and stew for 90 minutes
  8. Grease the baking pan with some olive oil
  9. Sprinkle some thyme on the bottom and put 500g of pork in it
  10. Season the meat with some salt and black pepper, add 2 sausages, put some bay leaves, duck confit fat, and garlic cloves on top
  11. Bake for 25 minutes at 200C or 390F
  12. Put the ingredients in a ceramic baking pan as shown in the video and bake for 25-30 minutes at 180C or 350F

Tips

Use ceramic baking pans instead of metal ones.
